15 Minute Roasted Chicken and Vegetables
A perfect recipe to share on a Monday! This recipe is one of my favorites. For many reasons:
1. It is SO SO SO easy to make and clean up. One dish wonder.
2. You can make it with whatever vegetables you have lying around.
3. Add potatoes and/or rice if you are carb fueling the day you make it.
4. Make sure you don't have potatoes for Low Carb.
5. I LOVE to top my bowl full with Sriracha, but my kids have a variety of sauces to choose from - or none at all!⠀ .
I try love having flexible meals that can work for any day on my food cycle. That way if my meal plan for the week gets hijacked, I can make changes to my meals easily to meet all my goals.⠀
